The owners of the upscale restaurant Péche in Palisades plan to launch a new venue called Tiki Bird in downtown Grand Junction. The project will occupy a former pizza spot at 119 N. Seventh St., with an opening targeted for mid-April. Co-owners Matt and Ashely Chasseur emphasize maintaining the high quality of service and food from their first establishment.
Matt and Ashely Chasseur, co-owners of Péche, are expanding their culinary presence with Tiki Bird, a forthcoming restaurant in downtown Grand Junction. Péche, which they opened in August 2019, is an upscale spot in Palisades that features seasonal menu items inspired by the local environment.
The new location at 119 N. Seventh St. previously housed Junct’n Square Pizza. While the Chasseurs have kept the exact concept of Tiki Bird confidential, they told The Daily Sentinel that it will uphold the same standards of quality in food and service that have established Péche as a regional favorite. In a blog post, they described handcrafting the restaurant's tables using epoxy, noting, “These tables will become first dates, new friendships, celebrations, heartbreaks, and everything in between.”
The couple has shared updates on the renovation process via Instagram, including the removal of walls to expose the building's structure. The initial report on the project came from The Daily Sentinel, and the opening is scheduled for mid-April.
This expansion reflects the Chasseurs' commitment to thoughtful dining experiences, building on Péche's success in highlighting regional flavors.
