Sushi restaurant Zuara reopens on Madrid's Castellana with dual concepts

David Arauz has reopened Zuara at Hotel Hesperia after a one-year closure. The venue features an omakase counter and a more affordable dining room called Teburu.

After a one-year closure, David Arauz has installed his restaurant at Hotel Hesperia on Paseo de la Castellana. The space splits into two areas: the Zuara omakase counter, set to open soon, and Teburu, with six tables offering menus such as the 75-euro bento.

Arauz, who earned a Michelin star at his previous location, aims to regain it. He serves nigiris from items like shrimp, sea bream and bluefin tuna, alongside non-sushi options.

The chef and his sommelier Álvaro Prieto highlight the use of five soy varieties and seasonal products. Arauz has worked with the same suppliers for 15 years and plans to adjust the menu based on availability.
