At the top of this selection is Pujol from Mexico City, while the 100th spot goes to Fukasawa from Chile, showcasing continental diversity.

Among Colombia's standouts, Oda in Bogotá holds the 76th position. This restaurant is noted for its use of autochthonous Colombian ingredients to craft a unique menu of contemporary dishes. Debora, also in Bogotá, ranks 85th, celebrating seasonal and typical cuisine with an innovative twist.

Selma, another Bogotá venue, appears at 96th, employing local products to reinterpret classic Colombian dishes with originality. From Medellín, Sambombi Bistró Local rounds out Colombia's entries at 98th, with changing menus that highlight contributions from small farmers and the venue's territorial personality.
