He noted that common sense indicates molletes simply consist of a piece of bread with beans and that this type of preparation could date back to the 19th century.

Herrera added that many anecdotes become part of popular culture over time, even if not entirely accurate. He highlighted the difference between popularizing a dish in a restaurant and claiming its invention.

Yordi Rosado had recounted in 2022 that one of his aunts first prepared molletes at the Sanborns de los Azulejos while seeking a quick breakfast during her job as a waitress. According to his account, a customer observed the preparation and requested the same dish with gratinated cheese.
