The Santa Costilla restaurant opened its new location on Bogotá's Calle 81 with a $1.5 million investment. The architectural design is by Mauricio Torres and aims to provide a renewed experience with a terrace and bar. This opening joins the existing locations in Usaquén and Briceño 18.
On August 1, 2026, Santa Costilla, known for offering 'the tenderest ribs in Colombia', inaugurated its new location at Calle 81 #11-44 in Bogotá. This opening represents a $1.5 million investment and marks a renewed stage for the brand.
The architectural design was done by Mauricio Torres, while Fabián Pérez handled its implementation and adaptation to the restaurant's essence. The location features environments that invite different experiences, with a terrace inspiring tranquility and freshness, accompanied by a dynamic bar with aromas, cocktails, giant screens for sports, and live music.
In addition to the signature dish, the ribs, the menu highlights preparations like Abuela Tulia's empanadas, Divine Croquettes, and desserts such as almojábana. This new site joins the locations in Usaquén and the countryside one at Briceño 18 golf course.
As a novelty, the location will also house McCarthy's Irish Pub Colombia, in a co-branding proposal aimed at enriching gastronomic experiences in the city.
