Chalito opens its first restaurant in central Madrid

The Catalan chain Chalito, specializing in artisanal milanesas, has opened its first restaurant in central Madrid on Calle Princesa 3. The brand, selling 27,000 milanesas weekly with Luis Suárez as an investor, marks a key expansion step.

Chalito, born in Barcelona in 2016 from four friends bonded by rugby—two Argentine—, has opened its first restaurant in Madrid's heart at 3 Calle Princesa. Seating 120, the industrial-design spot features artisanal decor with woods, irons, and natural paints. “It follows our philosophy of crafting everything artisanally [...] We want customers to perceive it's all handmade, like our kitchen,” says co-owner Juan Manuel Lema. The chain runs 24 outlets between Madrid and Barcelona, including four delivery kitchens in the capital and eight in malls like La Gavia or Príncipe Pío. It sells 27,000 milanesas weekly—6,000 kg of national meat—, mainly beef (10,000 units), chicken (12,000), and loin (3,000). Varieties include napolitana, fugazzeta, mallorquina, México lindo, and ibérica, priced at 12 euros (standard) and 16.20 euros (ibérica). It also serves empanadas, pizzas, and homemade desserts like alfajores, displayed in a fridge. Success stems from an underexploited niche versus pizzerias and burger joints.
