Rushina Munshaw Ghildiyal, Managing Director of Perfect Bite Consulting and Curating Editor of the report, stated, “The value of food today lies in the narratives of people, places, and traditions.” It draws from over 200 voices, including chefs, nutritionists, and entrepreneurs, forecasting trends for 2026 such as flavour maximalism with chatpata profiles combining sweet, spicy, tangy, smoky, and crunchy elements. Chef Ranveer Brar noted, “Food is only powerful when it tells a story. India, with its diverse flavours and beautiful contradictions, has so many stories waiting to be told.” Protein snacks are shifting to namkeen styles inspired by street food like bhel puri, moving away from sweet bars. Traditional mithai is evolving into Indo-modern versions with texture mashups and fusion flavors, such as matcha-infused laddoos. The report spotlights female farmers gaining prominence for their role in sustainable agriculture. Tanya Dubash, Executive Director and Chief Brand Officer at Godrej Industries Group, said, “Storytelling around food now includes the people behind it. Recognising the vital role of female farmers... reflects how our relationship with food continues to evolve.” Home cooking will blend pre-prepared bases with personal touches, as described by Chef Amrita Raichand: “As a working mom, life is a constant juggle and that’s exactly why smart, wholesome shortcuts matter.” Regional cuisines from areas like Malwa and Himachali are set to take center stage, with global interest in India's hyper-regional offerings, according to Chef Vikas Khanna.
