Pink Heifer BBQ Saloon to open second location on State Street

Pink Heifer BBQ Saloon, a Wisconsin-based chain, is expanding with a second fast-casual restaurant in downtown Madison. The new spot at 567 State St. will feature Texas-style barbecue items like smoked brisket and customizable mac and cheese. A soft opening is scheduled for March 3, with a grand opening on March 27.

Pink Heifer BBQ Saloon first opened in Monticello, Wisconsin, four years ago. The Madison location marks the chain's second site, run by brothers Levi Fox and Jorden Fox. It brings Southwest-inspired elements to State Street through its menu and decor.

The counter-service restaurant offers a simplified version of the original menu. Highlights include prime brisket smoked for 12 to 14 hours, along with chicken and pork options. Diners can customize a mac and cheese bowl with proteins such as chicken, pork, or brisket. Lighter choices and a large salad bar are also available.

Inside, the space features large tables for seating, Western-themed decorations, and a pink neon sign displaying the restaurant's cow logo.

Soft opening hours begin March 3: Sundays, Tuesdays, and Wednesdays from 11 a.m. to 10 p.m., and Thursdays through Saturdays from 11 a.m. to 1 a.m. Following the grand opening on March 27, the restaurant will add Mondays to its schedule and may extend weekend hours, according to Levi Fox.

The Fox brothers plan further growth, targeting additional sites in Madison and the Milwaukee area.
