Chicken inasal na manok from Western Visayas, an important cultural property of Bacolod, features marinated chicken brushed with annatto-infused oil and grilled for a golden color and peppery flavor. It is usually served with annatto-flavored garlic rice and spiced vinegar. It previously ranked first in Southeast Asia and 10th worldwide in November 2025.

Adobong manok, rated 4.1, is prepared by marinating chicken in garlic, onions, bay leaves, peppercorns, brown sugar, soy sauce, and white vinegar, then browning and simmering it. The dish is noted for its balance of savory, tangy, and sweet flavors.

Tourism Secretary Dita Angara-Mathay welcomed the recognition, stating, “Each dish carries the stories, traditions and creativity of our people, offering both foreign and local visitors a deeper connection through shared flavors.” She highlighted opportunities for the culinary sector, from farmers to small business owners. Filipino cuisine ranks 25th in the 100 Best Cuisines with a 4.28 rating.
