Noma plans $1,500-per-person residency in Los Angeles

Chef René Redzepi's Noma restaurant will host a spring residency in Los Angeles, with dinners priced at $1,500 per person. Noma, the Copenhagen-based restaurant founded in 2003, has announced a residency in Los Angeles from March 11 to June 26. Known for being named the world's top restaurant four times, Noma focuses on foraging, fermentation, and local ingredients tied to Redzepi's Nordic heritage. This marks the first extended U.S. project beyond a brief 2022 appearance in Brooklyn, following previous pop-ups in Tokyo, Kyoto, and Tulum, Mexico.

The venue is a historic site in Silver Lake, with the exact address disclosed only after booking. Diners must consent to on-site filming for an upcoming documentary. The $1,500 price covers a tasting menu with beverage pairings, taxes, and gratuity, payable upfront. A Noma Projects shop will also operate in the area, offering items like housemade vinegar, garum, and coffee.

Redzepi selected Los Angeles for its diverse culinary landscape. "It had to be Los Angeles," he stated. "I love this region. The vast Pacific. The farmers’ markets overflowing with produce in the middle of January. A place where you can have tacos for breakfast and a Thai tasting menu in an alleyway for dinner. Oaxacan mole from a strip mall. A great-grandmother’s kimchi soup served at 2 a.m. in Koreatown. L.A. is a city of wild contrasts — a place that makes you ask: how can these things go together?"

The team described their approach: "For this residency, our work will be shaped by the landscapes surrounding the city — from the Pacific to the mountains and deserts beyond — and by the people who know them best. We’ve spent the past few months listening, learning, and building a new pantry of flavors rooted in this place, filtered through our imagination and the experience we bring with us from Copenhagen. We can’t wait to share this work over the next coming months."

Plans include collaborations with local restaurants, pop-ups by Copenhagen chefs, and events through Redzepi's MAD nonprofit. The high cost supports relocating staff and families, plus mentorships for students from underserved communities.
