硝酸塩の摂取源と認知症リスクの関連性が研究で示唆される

エディス・コーワン大学とデンマークがん研究所の研究チームは、参加者を最大27年間にわたり追跡調査した。研究では、さまざまな摂取源からの硝酸塩および亜硝酸塩の摂取量と、若年性を含む認知症の発症との関連性を検証した。1日あたりベビーほうれん草約1カップ分に相当する野菜由来の硝酸塩を多く摂取したグループでは、認知症リスクの低下が認められた。対照的に、動物性食品、加工肉、飲料水からの摂取量が多い場合はリスクの上昇と結びついていた。本研究は、飲料水に含まれる硝酸塩と認知症の関連性を報告した初めての例であり、その関連性はデンマークおよび欧州連合(EU)の現在の規制値である1リットルあたり50ミリグラムを大きく下回る、1リットルあたり5ミリグラムという低濃度でも確認された。准教授のキャサリン・ボンドンノ氏は、野菜にはビタミンや抗酸化物質が含まれており、これらが有益な一酸化窒素の生成を促進しつつ有害な化合物を阻害している可能性があると指摘している。なお、今回の観察研究はあくまで関連性を特定したものであり、結果を裏付けるにはさらなる研究が必要である。
